From Awareness to Choice: Enhancing Understanding of Food Additives
The project addresses health risks associated with ultra-processed foods and their additives among the elderly and youth in the Taoyuan-Hsinchu-Miaoli region. It aims to enhance awareness of food safety and healthy eating through systematic education, interdisciplinary collaboration, and community engagement. Implementation focuses on four core areas: educational promotion, industry-academia collaboration, community participation, and technical support. Tailored health education courses are supplemented by digital technologies, such as LINE groups, for continuous interaction. In collaboration with food companies, the project develops low-additive foods and promotes their marketization to increase accessibility. Additionally, health seminars and workshops are conducted across communities and schools. Expected outcomes include improved community health literacy, the development of healthy eating habits, the transition of food processors toward healthy markets, and the establishment of a continuous community health support system.
